' TARTLETTES A'LA.-BALMORAL. ■Puff pastry for. lining tartlet moulds, 2 eggs, 4oz. butter, 2oz. of dried cherries, of castor sugar, }dz. cornflour, 2oz. of crushed sponge cakes, 2oz. letrion peel. Heat the butter and sugar to a cream, add the. yolks of ; eggs, one at a time, chop the cherries and peel very small, and add to the mixture with tho powdered sponge cakes.. Line tho ..tartlet moulds with pastry, whisk the whites of eggs to-a'stiff'froth, and stir in carefully to the mixture; fill the lined moulds three parts full, dust them with sugar, place. them on a tin, and bake m- a moderate oven. •. ■ ' .
