THE MEAT MARKET. The difficulties of the meat market are many and varied; and how hard it is oven for those closely connected with tho business to accurately estimate the prospects is illustrated by tho movements of the beef market. Early in Juno experienced salesmen in the Smithfield market expressed the opinion that owing to the prevailing scarcity of meat, and especially beef, prices would rule high until about September. All the trade circulars received in New Zealand by the,last mail are to the same effect, and yet beef is down. There is a fall of practically 50 per cent, in the quotations in about six. weeks, 'and yet we were assured that values would remain high for sorao months. To ado to this, there is a drop of 10s. in the quotations for hides. Tho high prices ruling in Mav had a good effect to the extent that they stimulated the demand for canned' moat. The shortage of supplies from America also helped canned meats. Largo quantities of the latter were withdrawn from London and sent to the West, where a very fine trade has been cultivated.
