BUTTER AT WINTER SHOW
THE ANALYSES. The analyses of tho butter ehowii at ithe National Dairy Show at Palmerston North last month provide some very interesting tables. Half a score of the exhibits contained 15 per cent, or more jrater, while some got .well on towards tho maximum allowance—l 6 per cent. There was a certain amount of consistency among the highly-moistened.butters. .For instance, onn Tanmaki factory's four entries included in their respective compositions 15.62, 15.77, 15.54, and 14.27 per cent, water. Another Taranaki factory with three entries is credited with iho •following percentages of • liquid—ls.o7, 15.21, and 15.33. l'ihama is credited with having exhibited an article with the least water in it—9.25 per cent. Pihama's lother entries contained 11.94 and 11.85 .per cent, water. Dannevirke entered tho ;driest butter, • the water content being 9.44, 9.62,: and 10.20. 'The average, amount of water in all the" "butters is about 13 per cent. The greatest percentage of fat in any ■ butter entered was 89.14 in one of Dannevirke's entries. JFor another :box from the same factory 88.69 per cent, was recorded, and the next highest. was 85.28 ill ono of the Rangitikei factory's butters.
