- MONDAY. , lieef steak and kidney pudding. -Veal cutlets. Tomato sauce. Potatoes, ■ -carrots, and turnips. Stewed fruit. Rico pudding. . BEEF PUDDING. Half-pound flour, Jib. breadcrumbs, Jib. finely-chopped ; suet, 21b. beet' steak, 2 sheep's kidneys, 1 onion, 1 teaspoon" baking powder. Mix the flour, suet and breadcrumbs together, add powder and salt, mux with water or milk into a stiff dough. Roll, out,' grease a basin, cut a piece to fit top; and line basin with remainder. Make a hole size of sixpence in the bottom. Fill upuvith the meat, cut' in small pieces, the kidneys skinned, fat . removed, and onion oliopped up,; season imd. add. 2 tablespoons. water, wet the edge and cover. Wring a out of boiling, water, flour and tie over, tying ends up. Drop in boiling water, and cook three hours. Turn out on hot fell, and pour sufficient boiling, water into hole to make gravy.
