Dairying Division, points out. that" butter 'exports from July 1, 1908, to date, totalled only 9456 tons, as compared with'l4.s67 "tons'for tho oiie'preceding, and.21,562 tons for 19061907,; ' 5933 tons were snipped to Great Britain, 614 tons to South Africa, .690' tons tp.'Eastern countries, and, 2169 tons to inter i state ports. > Twenty-eight per cent., of that shipped to Great Britain "was- unsaltedr as compared with 28 per cent. ; last year,. and 30 percent, for tho one preceding..'' :'■.'-,• :' It was unfortunate (says Mr. Crowe)' that .there was no authority to condemn ■ and force out <jf use cans and'vessels unsuitable for holding 'milk and cream,; for an immense' loss was annually incurred through the resulting contamination. Some butter factories, more especially the, proprietary butter, factories, had overcomo' the trouble by taking the; matter • into- their own hands,' and, ■whenever' a\ . rusty-bottomed can reached them,, ! 'replacing. it with a new bottom, and debiting suppliers with the cost; .The result was that tho butter manufactured from cream'kopt in. clean cans realised Jd. ,per lb., more. than that ; made from tho same cream which had been kept in vessels off which the tin was worn.
