A' correspondent writesln one of your articles of a. few days ago you showed the comparison ■ between butter at lljd. and cheese at 6d. In my opinion your statement was not quite clear to. the! averageminded -man. 1 think you will find the figures below show the difference: more clearly, taking as a basis that 231b. milk wjll make lib. butter, and that 231b. milk will make 21b. to 31b. cheese. The' result will be asfollows: —It - will take 51,5201b. of milk to make one ton of butter; the same weight of milk will make 2 tons 6cwt. cheese. £ s. d. . Two tons 6cwt.. of cheese at 6d. per lb 126 16 0 One ton buttor at lljd. per lb. 107 6 8 The difference ■in favour of checso - 21 9 4
