How to Keep Bread Fresh During Holidays
CHRISTCHURCH, Dee. 20. To keep bread fresh and free from . mould during the holidays do not enclose it eoiupletely in eontainers. Always allow soine air to circulate round the loaves. This adviee was given today by the Chief Choihist at the Wlieat Research Institute (Dr. E. W. Huliett). ' ' Houtieholde'rs' will be obliged to keep uread longer than usual during the next two weekends and will ha.ve two prob- • lehts-. tb overcome if bread is to be kefit fresh and free from mould," said Dr. Huliett. "The growth of niould, white, green or black, depends'on the darupness ot ilie loaf. Bread isVfiaturally moist and if. it is eompietely endosed the moisture slowly moviilg .out frbm the crumb wi.l accumulate on the crust and cause mould. It is neQessary, therefore, to . i aJllow some drying'"OU. the outside. " He said the second problem was slaling. People tended to euclose bread under the mistaken beliof that staling was due to dryness. It actually was due to chemical ehange in the starch. If bread was kept it would still beeonustaie, he said. " Deep freezing is ex cellent, but placing bread in an ordin ary household refrigerator will not pre vent staling." The praetical thing to do was to put bread in eontainers which were not fully closed and whieli ailowed the air to eireuiate. Loaves shouhl be kept apart in eontainers and not paeked on top of each other, sau Dr. Huliett. Croeks should be kep' '• eleau and oecasio'nally wiped out wrt> * .vinegaT.
