USE BARLEY
In thc absence of rice from thc market, other cereals may be substituted to advantage. PCarl barley serves very well and may be used instead of rice in baked and boiled milk puddings, or with curries and other savoury dishes. Cream Barley. — Sprinkle two ounces of barley into oue quart of scalded milk and add a pinch of salt and a small piece of stick cinnamon. Then balce in a slow oven four to live hours, stirring oecasionally, or cook over boiling waterfour to hve hours, or until it thickens. During the last hour of co'oking, adfl two tablespoons of raisins or sultanas, aud remove the ciauamoa.
