Milk-fat layer
Sir,—Some homogenised milk dated June 20 had a layer of milkfat on top. This was caused by an operating error which caused some air to be sucked into the milk lines and processing equipment. When this aerated milk was put through the normal high-speed processing equipment some of the milk-fat was whipped which caused it to rise to the top and set. The homogenised milk in question was normal in all other respects. We regret the inconvenience to consumers.
