Stuffed almond peaches is a simple sweet to make but is unusual and delicious. When you shape the mixture to stuff the peaches, shape it

like a small fish cake. This makes it look attractive. You will need: 11b 13oz can of peach halves 3oz of ground almonds 2 tablespoons of peach juice or 1 tablespoon of juice and 1 tablespoon of rum and a good pinch of ginger 2oz of Demarara sugar i-i pint of thick cream Method: Drain the juice from the peaches and place each half, cut side up, in a well buttered fireproof dish. If you wish to serve this dish cold keep one peach half for decoration. Make the filling by mixing together all the ingredients except the sugar. Stuff each peach half and sprinkle with sugar. Bake at 350 degrees F. for 15 to 20 minutes. Serve hot with boiled peach juice or cold with chilled whipped cream decorated with peach slices. This serves four or five.
