prick the bottoms with a fort. Place a little of the ham in each case. Beat the egg yolk with milk, salt and pepper and mustard, then stir in two ounces of the cheese. Beat the egg white until stiff and fold into the mixture. Carefully place two teaspoonsful on top of the ham and sprinkle each patty with the rest of the cheese. Bake in the middle shelf of a hot oven (400 degrees Fahrenheit or regulo 5-6) for about 15 minutes. Remove from the oven and stand for a minute or two, then turn them carefully from the tins. Serve hot or cold.
