Raisin, orange, and cheese fian makes an ideal snack, but make plenty because the family will want more than one piece. This recipe is very popular with children. PASTRY Ingredients: 1 cup of butter 1 cup of self-raising flour! 1 egg i cup of sugar 1 cup of plain flour.

Method: Cream the butter and sugar then add the egg. Sift the flours with salt and fold into the creamed mixture. Roll out and line a large pie dish. RAISIN LAYER Ingredients: Boz of seedless raisins 1 tablespoon of grated orange rind 1 dessertspoon of melted butter 1 tablespoon of golden syrup 2 tablespoons of orange juice 1 tablespoon of sugar. Method: Mince raisins or chop up finely. Blend with the orange rind, melted but- ! ter, orange juice, golden syrup, and sugar and spread ■in the pastry case. : ORANGE-CHEESE LAYER

I Ingredients: 4oz of cream cheese 1 cup of sugar 2 egg yolks i cup of milk i cup of lemon juice 1 tablespoon of plain flour 1 dessertspoon of grated orange rind i cup of orange juice. Method: Beat the cream cheese and sugar well together. Beat in the egg yolks (and stir in the milk, flour and orange rind. Then the fruit juices mixed together. Spoon on top of raisin mixture in the pastry case. Bake in a moderate oven until the orange cheese sets and the pastry is crisp.
