Passionfruit And Apple Bars

Here is a delicious new thick bar of the much more cake than biscuit sort. It is very easy to make, and has a most delightful fruity layer of apple and passionfruit which makes it an unusual and most popular addition to the tea tray or lunch box. Apple and Passionfruit Bars: 2 large cooking apples, 4 passionfruit. | cup water, i cup sugar. 2| cups rolled oats, 1J cups flour. 1 teaspoon baking soda, | teaspoon salt, 6oz butter. Slice apples thinly and place in a saucepan with passionfruit, and half a cup each of sugar and water. Stew gently until cooked and pulpy, stirring until smooth and jam-like in consistency. Allow to become cold.

In a bowl place 1J cups of sifted flour and 2J cups of rolled oats. Mix well. Add one teaspoon of soda. J a teaspoon of salt, and a large packed cup of brown sugar. Mix together thoroughly, then rub in 6oz soft butter, working together with the hands until the mixture is well blended but crumbly. Butter a nine-inch square cake tin and turn in almost three-quarters of the crumbs. Spread the cold apple and passionfruit puree over the top, then scatter on the remaining crumbs. Pat into a neat and even coverage with the hands, then bake for one hour at regulo 4 or 350 degrees. Cut into rather small bars as soon as it conies from the oven, pressing back into place any crumbs that rough up. Allow to cool, then chill firm before lifting out of the tin. It will store and keep beautifully
