BUTTER-FAT.
TO THE BDITOK 0» THX PMsg. Sir,—"Canterbury Butter-fat" has raised a question which has puzzled, annoyed, and given rise to much dissatisfaction to without exception every dairyman of my acquaintance, not only in respect to the amount per pound paid as an advance payment, 11 ln -n£ ' or bonus payment as well. Two years in succession some southern factories have either been the victims of the Dairy Board's alleged partiality to North Island concerns, or they have exploited their suppliers on the past season's opera- | tions to an amount varying from 2d to 3Jd per pound superfine, as compared with our brother punchers somewhere north of Cook Strait. The grading of cream is also a source of intense dissatisfaction. There exists more than a suspicion that in some quarters it is highly desirable that rigorous Governmental supervision in grading, testing, and pay-outs would be in the suppliers' interest. Vide your issue of October 27th: "At a meeting of the Dairy Produce Board held last week consideration was given to letters from several dairy companies expressing anxiety regarding the condition of the license which empowers the Board to undertake audit of accounts in Great Britain. "\Vhilst some expressed a desire that no continuous audit should! be undertaken, others wished this type of audit carried out." It's a vast pity that a license to audit some factories' accounts here is apparently not within the Board's jurisdiction. Battledore and shuttlecock, said Sam Weller,- is a good game. He strongly objected, however, to Mr Pickwick playing it with Dodson and Fogg.— Yours, etc., T. POWELL. Otaio, October 31st.
