kir,—Ln your isuo to-day a recipe is given in the "Women's Corner 1 ' for preserving fruit without sugar, by merely filling the jar with boiling water alter heating the jar of Irnit in the oven till it is (juito hot. If thu jar of fruit is previously lioatcd quite to boiling point for about an hour, it is safe; uut it is advisable to point out that insufficient heating has led to fioi ious illness, caused by a disease tailed "botulism." Within recent years twenty-two outbreaks of this disease have occurred in California and Oregon, attended with paralysis, and followed by 67.9 per cent, of deaths. Tlio samo diseaso has also occurred in chickens, after oating tanned corn and beans. It in significant that in all the outbreaks of botulism, the preserved fruits and vegetables had been prepared at homo, showing that tho domestic methods of sterilisation had been imperfect.—• Yours, etc., W.
