TO THE EDITOB OF THE PRESS. Sir, —According to a recent publication a new and valuable discovery has recently 1 been made by an eminent doctor in the form of a " powderized" milk. About three months ago there appeared in vout paper another article on "' desiccated " milk, in which it was claimed tliut the process had been discovered by an eminent Genna.i sciential, who stated that this form of miik can bs produced at the rate of twopent*per gallon. 'Hi* method of production, however, has not yet been described. Ti>a difficulty in powderizatkm is not great as that of keeping the milk for an indefinite time. Milk treafed by this pro ce.s4 is. effectually sterilised. Milk fevers and other diseases arising from infection become an absolute impossibility when the luilk is treated by this process. When we can safely put a threepenny packet of powdered milk in our pocket, we ehall hare launched out into the world an enterprise of great and permanent commercial value. Tlie smallest milk vendor or davy ifurmer will find an immediate demand lor all the milk he can produce. 1 will venture ono etep beyond powdered milk, and suggest milk tabloids, which when perfected, will be superior by far to miik powder. Now, Stir, New Zealand can boast of some clever inventors. Could not some of our dafry experts discover some process of resisting heat in order that the milk might be carried in one's pocket or elsewhere 'i Iβ it possible that you may ask, j what is the great difficulty in connection with the keeping of powdered milk? It •is that when made, after a certain time the powder dissolves like that of desiccated et'ooanut, if brought in contact with heat. I trust that before lopg some one in New Zealand will not only have patented and perfected the powderized milk in all it* branches, but will Itave also claimed the first authorship of milk tabloids. —'Yours, etc., JAS.
