Maoris To Roast A Whole Bullock At Temuka Carnival
The roasting of a bullock by the Arowhenua Maoris in the district will be the main attraction at the Temuka carnival. It is at least 15 years since a similar form of entertainment has given in the district.
To prepare the umu a hole at least one and a half times the size of the beast is dug in the dry earth. Layers of x dry wood and large boulders are placed in the hole to a depth of about four feet, and the firing continued for about four hours until the stones become red' hot. The embers are then removed and the stones spread well around the cavity. A strip of wire netting is placed over the boulders to facilitate,* the removal of the bullock, which is set on top in four quarters. Wet clean sacks and dry earth are heaped on top to contain the steam which is generated. Depending on the weight of the bullock to be cooked, four to five hours steaming is necessary to complete the operation. The meat is then taken out and cut up.
