Chilled milk drinks made at home are welcomed treats on hot summer days. Cookery specialists, of the Department of Agriculture suggest several. _ A delectable milk shake can be made with banana pulp instead of ice cream. To fill a tall glass, peel fully ripe banana, slice and press through a medium-fine sieve or put into a bowl and beat with an electric mixer or rotary egg beater until smooth and creamy. Add 1 cup cold milk and beat again. This banana milk shake may be varied by flavouring with vanilla or nutmeg, by adding chocolate syrup or by using a half cup of orange juice in place of half of the milk. Eggnog, too, makes an excellent cold drink for summertime when both eggs and milk are in good supply. Just add a fe?v grains of salt to an egg and beat until light. Then mix thoroughly with a cup of cold milk, £ teaspoon of vanilla and 1 tablespoon of sugar. Pour into a chilled serving glass and sprinkle nutmeg or cinnamon on top. Lemon eggnog is good, too. To make it beat 3 tablespoons lemon juice with the egg, combine with about 4 tablespoons sugar and one cup of cold milk. Omit the vanilla and top with grated lemon rind instead of nutmeg.
