BAKED APPLE DUMPLINGS 4 large apples, h cup brown sugar, 2 teaspoon cinnamon, 1 teaspoon grated lemon rind, 2 tablespoons shortening, 4oz shortcrust pastry. Mix together the sugar, cinnamon, lemon rind and shortening. Make the pastry and roll out about an 3-8 inch thick. Cut into four squares. Peel and core the apple and fill the centres with the sugar mixture, Place one apple on each pastry square. Moisten the edges of the pastry and fold around the apple, pinching together to hold jn place. Place on a- greased tray and bake in a moderate oven, temp, 350 deg. F. gas, 400 deg. F. electric, for 30 minutes'or until, the apples, are tender.
