DEMAND FOR MARGARINE SALES SHOW INCREASE Pursuant to a recent disclosure* that margarine sales in, Wellington had increased by 400 per cent over the last lew months, inquiries were made early* this week when a simi- * lar increase was reported.. It was considered in some cases that the highprice of butter was beyond the mean 1 ? of some of the poorer classes in Wellington and this fact perhaps may account for the phenomena] increase in margarine sales there. "My'sales have increased by 10ft per cent/' said one grocer, "and a? my butter sales have not fallen at *11, I think it could be reliably -assumed that more margarine is being? used for cooking purposes.?' TJr's was the general opinion of grocers interviewed and while margarine was considered a satisfactory substitute for butter for cooking" no fears were entertained" as to the possibility of a general" changeover to margarine for table? use. The increases vary from 50 per cent to 100 per cent, though the largest amount.sold was about SOlbs as compared with 5601bs of butter.'
