A SUCCESSFUL DAIRY FACTORY

The " North Otago Times" says :— The Walareka Dairy Factory Company have reoently paid the milk suppliers the hand tome sum of over £800, being the first quarterly payment this season. The daily supply of milk is now largtr than it has been In any previoaa season, while the manufactured product m the shape of cheese is being disposed of as soon as it is In a fit condition to leave the factory. The present proipeota of the factory are very encouraging, and it is to be hoped that the season's operation will result Id something substantial to the shareholders. Milk suppliers oannot be otherwise than sulsfied, as the pecuniary results must | have been much greater, this season, at all events, than if they had been relytug on the manufacture of bot'er for the local market. Having mentioned butter, we may stati that it is the intention of several of the farmers m this locality, to test the London market by making consignments of a few kegs. We are of opinion, however, that if a trade m butter ii to be oarried on, It oan only be done ti advantage on the faotory prluoiple, which is the only means whereby uniformity of quality is to be attained, and cot only uniformity In that respact bat also m general get np aod appearance, which got s a long way m the fixing of toe value of the article. In our opinion individual experiments m shipment will hardly meet all that is neoessary to secure a proßtable market for our surplus bat'er. If dairy farmers are to leap the fail benefit of the markets of the world It must be done through tbe faotory system.
