A correspondent of the Bruce Herald writes ;In a paragraph lately published I read that in Russia and Turkey milk frozen into blocks fa a regular article of commerce, and sold in all local markets. It immediately occurred to me—What was to prevent roi k being frozen here for use on ship board and exportation to countries where it is both scarce and dear 1 Since then, on making enquiries I find that frezen milk is in general me on many of the Union Company’s boats and all the direct home vessels, and am informed on good authority that freezing does not Injur it. Dairy; factories are springing up all over the con try like mushrooms, and nothing tu my mind is more curtain than that when our supply of cheese exceeds the demand in the Australian colonies, values will fall considerably, and farmers will have to accept lower prices for their milk to enable the factories to carry on. It seems to me, however, tha' the demand for fresh milk in the large cities of the world must be practically nnlimited, and I would suggest that the directors of some of the factories just starting make enquiries into the feasibility of freezing miik for exportation before purchasing the plant necessary for chee'-e making. The retail pr es of fresh milk delivered in Dunedin varies from 3 i to fid per quart, and I do not suppose it wiil be lees in the largo cities of England or Australia. I have refrained from going inti figure*, simply throwing out tha suggestion In tho hope that some of your many readers will look into the matter and see if there is anything in it
