WHAT'IS DAIRY PRODUCE?

To the Editor.

Sie, —I never like to interfere in any way with the work of judges, but I have alway considered that their instructions were to judge each class according to merit, and strictly in accordance with entry. One of the decisions arrived at on Wednesday put both merit and entry in the shade, and instead of abiding by a collection of dairy produce they awarded to prize to what was simply a variety of farm produce. I took the trouble of exhibiting over a hundred pounds of cheese and butter, got up in such a variety of ways .simply as producers have to do to suit the public. Against this was exhibited one small ohasje and about two pounds of butter. I was not aware that dressed fowls, loaves of bread, honey, etc., constituted dairy produce, but we live in a progressive age, and perhaps by another year the introduction of a few tins of jam or frozm sheep and a bag of potatoes, perhaps the collection will become more complete. Had 1 seen the award within the proper time I should certainly have lodged a protest against such a decision, but as it is I live in hope that by another year wa shall have tie matter definitely settled, so that exhibitors will know whether the award is to be made in accordance with this class, viz, for the best collection of dairy produce, or if tb> same is to consist ot a general collection of farm produce. 1 am, etc, G. Gilmour,
