CORRESPONDENCE.

We Jo not hold ourselves responsible for ihe opinions expressed by our correspondents. THE PRICE OF BREAD. To the Editor. Sir, — My attention has just been directed to your article in Saturday’s issue on the price of bread. I may at once admit that bakers have not exercised the same care in weighing their bread as is required by the new Act, and although I have repeatedly seen loaves overweight, e rors were more frequently on the other side. Now bakers must, to protect themselves, supply bread at least a overweight, and the weighing and stamping will entail much additional la)aor, for wjiich the consumer —reoeiying all the advantages—is not, I think, vm? naturally asked to pay. Without wishing to oast any unfavorable reflections on the i ra le to which it is my misfortune to be-

long, I can assure the consumers in confidence that in many cases they will receive very good value for the extra penny. All things considered, I think 7d the ilb loaf is not an exorbitant price for bread made from flour for which the bakers pay LI 1 per ton. Fortunately, the best floor in the colony is man factured in our midst, which enables the Ashburton bakers to earn a good name for their bread, and all will admit that quality and quantity in this necessary article are worth paying a fair price for.—l am, etc., Thomas Taylor.
