‘EGGS ARE SCARCE AND EXPENSIVE” Here are two ot three rather nice eggless recipes which may he useful at this time of year. All have been tested. Gingerbread: i cup butter or good dripping, 1 cup golden syrup, 1 dessertspoon soda, 1 teaspoon each of ginger, spice, and cinnamon, pinch salt, 2 cups flour, i cup boiling water, 2 small cups sugar. Syrup need not he warmed. Add hot water last. Moderate oven. Delicious Cake: }lb. fat (butter, lard, or dripping or partly made up), fib. sugar, 1 tablespoon cocoa, 4 teaspoons vinegar, 1 cup chopped walnuts, 2 large cups flour, vanilla, fib. dates or other fruit (chopped), 1 dessertspoon golden syrup, 1 teaspoon baking powder, 2 teaspoons soda. 1 large cup milk, pinch salt. Beat fat and sugar till light, add milk, syrup and soda after heating; mix flour, cocoa and baking powder and add. Mix well and then add dates and nuts, and, lastly, vinegar and vanilla. Bake f hour in fairly hot oven. Ice with plain chocolate icing. Dainty Pudding: 1 large cup flour, 2 tablespoons jam, 1 teaspoon soda, 1 tablespoon dripping, 4 cup sugar, 1 small cup milk. Mix all together and steam If hours. Caramel Dumpling: fib. flour, 40/S. butter, J teaspoon baking powder, pinch salt. Rub butter into flour and mix to stiff with water. Roll and place in a colander. Kill with sliced apples sweetened to taste. Pinch sid«s together and tip joined side down into piedish. Mix 2 tablespoons butter and sugar, and spread thickly over dumpling. Bake J an hour.
