To Make Candied Peel

OAK the skins of the oranges and lemons in slightly salted water for three or four days. The skins should uot be broken, and all pith should be removed from the inside. After they have soaked in the water for this time boil in fresh water until they are soft, then drain well. Next, a syrup should be made by boiling sugar and water together in the proportions of one cup of water to two cups of sugar for five imninutes. Pour this syrup over the peel and allow it to stand for three or four days. Strain off the syrup and _ boil it‘ up again. Put the peel into the boiling syrup and boil until the peel is clear. Place the peel in a shallow dish, put a little of the syrup. into each hollow, sprinkle fine sugar over the top, and leave it to dry in a cool oven.
