Barley Sugar.
2lb. lump sugar, little lemon essence, 1 pint water, + teaspoon cream of tartar. Method: Put the sugar, cream of tartar, and water in a pan to boil. Cook till quite brittle when dropped into cold water. Add a few drops lemion essence, and pour on to an oiled slab.
