Griddle Cakes. ' Take half a pound of fine oatmeal, and add to it one teaspoonful of sugar and the same of baking powder, with a pinch of salt. Mix all these well; together, and beat into it enough skim or sour milk to make a light batter, and bake it by the spoonful on a hot griddle. - Cleaning Windows. For cleaning windows use ammonia, in the proportion of one .tablespoonful to one gallon of water, or whiting mixed with cold water to a paste about as thick as cream. But the work can be performed by using clean water and two chamois leathers, one for washing the glass and the other for polishing. The latter can be kept dry and soft. See that the wash leathers are quite clean, and do not make the glass so wet that the water drips from it. Have plenty of clean water and change it frequently. Dip the chamois in this and rub the panes, taking care that the corners are not forgotten. . Wring the cloth tightly and go over the surface of the glass a. second time. Then polish with the other wash leather. Raised Veal Pie. Required one pound and a half of veal cutlet, two or three hard-boiled eggs, a quarter of a pound of lean bacon or ham, pepper, salt, sweet herbs, lemon rind, a little gelatine. For the crust: One pound and a quarter of flour, four ounces of lard and butter mixed. Cut the veal into slices, also the hard-boiled eggs and the ham. Put on a plate a tablespoonful of flour, a teaspoonful each'of pepper and salt, a tablespoonful of chopped sweet herbs (fresh), and a little lemon rind. Soak a quarter, of an ounce of gelatine in cold water, and then dissolve it in half a pint of water or white stock. If you have a raised pie mould, use it; if not, use a cake tin to mould your pie; grease it well. Boil the butter and lard in a gill and a-half of water, pour it on to the flour, and knead well. Roll out, line the tin, carefully joining the edges, and keeping back enough paste for the cover. Now put in the veal, ham, and eggs in layers, sprinkling each with the seasoned flour, press closely down, cover with paste nicely ornamented with leaves, leaving a hole in the centre. Bake for an hour or an hour and ,a half. When donp pour the gelatine and stock or water carefully through the hole and leave till cold. Turn out, and servo on a napkin. Household Hints. A weak solution of gum mixed with Epsom salt crystals dabbed on the window panes will produce a ‘frosted 5 effect. To keep this for any length of time give a final coating of. the gum solution alone. When a pipe from the lavatory basin becomes clogged with soap, take a handful each of salt and soda and force down the pipe. Leave for an hour, then pour down a kettle of boiling water, afterwards flushing well with warm water. When curtain pins have been in use for some time they are apt to become rusty. To remedy this, let them stand for a few minutes in a cup of water, to which a little ammonia has been added. Then remove and well rub, and they will look like new again. To clean bronze, brush out all dust, then rub well with a flannel slightly moistened with sweet oil. Use as little oil as possible, then polish well with a soft duster.
