Here is the recipe from an Auckland Link in the Daisy Chain: A quarter of a pound of butter, 1 teacup sugar, 2 tablespoons milk, 1 teaspoon baking powder, 1 small teaspoon bicarbonate soda, 1 egg well beaten, 3 mashed bananas (firm), 11 cups flour. Method: Cream butter and sugar, add egg, then flour, baking powder and bananas. Dissolve soda in milk and add to above. Bake about 1 hour in moderate oven, This sponge can either be baked in sandwich tins and mock cream filling put between, or in a flat baking tin, with whipped cream on top.
