Dear Aunt Daisy, I am writing to ask if you would kindly let me have the recipe for ginger creams, They are like melting moments but ginger flavoured. I cannot find the recipe in any of my cookery books, I have asked two or three friends, but they cannot help me, so I thought of

Yes, the Datsy Chain responded at once with this recipe: 2 lh. butter, 34 cup sugar, 2 eggs, I dessertspoon golden syrup, 2 breakfast cups flour, 1 teaspoon baking powder, 1 teaspoon each ground ginger and cinnamon, 1 level teaspoon baking soda dissolved in 4 cup hot water, Cream butter, sugar and golden syrup, add eggs one at a time, then baking soda in the hot water, lastly sifted dry ingredients. Drop teaspoonfuls on a cold tray and bake in a moderate oven. Join together with mock cream, or better still, firmly whipped fresh cream. Mock Cream for this Quantity: 3 tablespoons each of butter, sugar and boiling water. Beat together till the consistency of whipped cream.: Flavour to’ taste. — x
