Cooking Beetroot Quickly
Dear Aunt Daisy, Do you know this quick way to cook beetroot? Peel and slice raw beetroot as you would apples, and boil until tender. Let stand until cold in the water they are boiled in-this puts the colour back. Then strain, add vinegar, sugar, pepper and salt, and serve. This way only takes about ¥2 hour.
