Shrinking Pickles
Dear Aunt Daisy, ‘Could you tell me why my ripe tomato relish shrinks in the jars? I noticed this last year and put it down to the length of time I had kept it, but on looking at some I made a couple of months ago, I find it is already shrinking in the jars. I always use the same recipe and bottle it immediately and seal down with cellophane tops. On talking it over with a friend, I find she has just the same trouble, so we will be waiting anxiously for vour replv.

I think most home-made pickles and relishes do shrink a little, and have been advised that it is much better to use corks than cellophane or paper for covering; and. even then to cover the whole top of the pickle-jars with wax, after'-covering. Some good housewives believe it best to allow. the pickles to cool down before corking, so. that they may settle down well, and you can fill them up from the pan if they have left a space. Perhaps some of: our Daisy Chain Links will solve the problem for us.
