Sponge Drops
Dear Aunt Daisy, Here is a recipe you might like to give to the "Daisy Chain." These sponge drops can be made and packed away in a tin like biscuits and joined Aogether with whipped cream some hours before they are needed. They are lovely to have on hand for Christmas and any special occasions and so easy to make. Beat well 2 eggs with a pinch of salt, add 2 cup sugar gradually. Beat well again,then sift 2 dessertspoons flour and 2 dessertspoons arrowroot with 1 good heaped teaspoon baking powder and sift these dry ingredients 2 or 3 times; fold in lightly and let mixture stand in cool, draughty place for % hour. Drop in teaspoon lots on buttered slide, leaving plenty of room ‘to spread. Bake till light golden yellow. When cooked run a knife under each as soon as out of the oven and leave on warm slide’ till cold. They. should he crisp and dry, and will keep well if packed in layers of greaseproof paper. Put the whipped cream filling in. about 6 hours before they are required and sprinkle with icing sugar. They just melt in your -mouth-they go so light and soft. I bake them in a moderate oven the same heat as for a sponge, but they cook very quickly-lI find in about 5 minutes, Only put in ore tray at a
time.
