Substitute for Eggs
Dear Aunt Daisy, A young housewife asked for an egg substitute. I have not tried this myself, but it was given me years ago by an old housekeeper: One tablespoon gelatine is equal to 3 eggs. Let the gelatine dissolve in a little cold water for 5 minutes. Add enough boiling water to make a cupful; beat well and add to rest of ingredients. Another excellent substitute for 2-3 eggs is 1 tablespoon golden syrup dissolved in 4% pint warm
milk.

A nice custard is made by 1 tablespoon ' golden syrup dissolved in 1 breakfast cup warm milk if mixed with 1 pint cold milk and baked slowly.
