To the required quantity cold water add sufficient salt to float an egg. Boil 10 minutes, cool and strain. If this brine is put into a large jar the beans can be added as collected from the garden. They are not as salty as when done the other way-alternate layers of salt and_ beans. Slice the beans before putting into brine. When wanted for use wash well in cold water before cooking. Have you ever tried this way? It is very good. To 21% Ib. beans allow 1 Ib. salt and1 Ib. sugar. Cut beans as for the table, put in bowl. Mix sugar and salt well, sprinkle over beans, and leave overnight, Next day pack into jars, cover with the brine which formed. Keep in a cool place. Don’t screw airtight, Wash and cook as usual.
