Coconut Ice

Dear Aunt Daisy, : Here is a recipe for uncooked coconut ice, using condensed milk. One pound sieved icing sugar, a pinch of cream of tartar, 1 white of egg, 3 tablespoonfuls condensed milk, 4lb. desiccated coconut. Mix lb. icing sugar with cream of tartar and slightly beaten egg white, then milk, and work together until quite smooth, gradually adding sufficient of remaining sugar to make a good stiff mass. Dust rolling pin and board withicing sugar, and roll out the mixture to Y2in, thickness. For second layer repeat ingredients and method as above, but when mixing, add colouring to make a pretty pink. Roll out as before, brush over white layer with white of egg, press pink layer on top, then cut the coconut ice into bars or squares and leave it to dry. "Riccarton Link."
