Fruit Juice
~Dear Aunt Daisy, When stewing plums, I find their juice so delicious that I would like to bottle some for drinking, preferably in concentrated form. Could you give me some directions as to how to do this? "].W.," Greytown. Fruit juice is delicious bottled, especially the berry juices, but any soft fruit can be done. Crush the fruit and allow to stand a little. Add a very little water and place over low heat to make the juices flow. When you think the juice is well out, rermove and strain through muslin or cloth, Then bring to the boil, and add about 12/b. sugar to each pint of juice. Boil steadily for 5 minutes, then pour into sterilised bottles while boiling hot and seal at once. A very safe seal for fruit-juice is to put a dessertspoon of olive oil on top in each bottle; then cork tightly. The oil is easily poured off when using, or soaked up with cotton wool; and it leaves no taste.
