Cooking Salted Beans

Year Aunt Vatisy, I have always salted down beans for winter use and have had great success with them, but this year I find that they will not soften, even after being cooked for an hour! I have tried putting them on to cook in cold water, and also have tried boiling water, but they still stay hard. I always’ pick young beans out of the garden to use. "Mrs. M.", Mt. Eden. Try putting the beans on first in cold water, and when boiling, strain off and begin again with fresh hot water.
