SHORTCAKE
Two cups well sifted flour; 3 teaspoons baking powder; %4 teaspoon salt; 3 tablespoons sugar; 2 cup of ‘shortening; 1 beaten egg. ..Sift the dry ingredients together. ‘Rub in the shortening lightly; mix to light dough with the egg and as much milk as necessary to make an easily handled dough. Roll or pat out into a round, % inch thick; arrange it in a greased sponge tin, bake in hot oven (450 degrees) about 15 or 20 minutes till done. Then split the hot shortcake through the middle, butter the layers; and put together with cold juicy shortcake filling. Top with more fruit (and a little whipped cream) or serve with ice cream or custard. Shortcake Fillings: Chill well before using. 1. Sweetened raspberries with diced oranges or diced pineapple. 2. Sweetened apple sauce with cinnamon or nutmeg. 3. Sliced sweetened peaches. 4. Sliced bananas or peaches with crushed raspberries or strawberries. | 5.
