GRILLED HERRINGS

| Two. tablespoons butter, 1 minced onion, 2 tablespoons } flour; 1 teaspoon sugar; 42 teaspoon dry mustard; 2 tablespoons vinegar; 1 cup water. Melt the butter, add onion, cook till yellow. Stir in the flour, sugar and mustard. Add the vinegar, and gradually the water, stirring constantly till it boils. In meantime wipe dry the fish, sprinkle with salt and pepper, place on oiled broiler rack and broil from 12 to 15 minutes, turning over.
