BOBOTIE (South African)

Two pounds of mutton; 1 cup of milk; 1 largé slice of white bread; 2 eggs; 2 onions chopped finely; salt and pepper; 1 tablespoon of curry; 1 tablespoon of sugar; juice of 1 lemon; 2 tablespoons of vine-, gar; 2 tablespoons of butter or fat; 8 chopped almonds; a few drops of almond essence; and a few lemon leaves or bay leaves. Mince the meat. Soak the bread in milk, then squeeze it out again, Fry the onions in the butter or fat till golden brown. Mix all the in&redients except the milk and 1] egé; and put it into a piedish. Pour over the beaten egg and milk. Stick the leaves into the top of the meat. Bake until the custard is set and the meat well done, and serve with rice when available.
