I am sorry there are not more for you to sample. These were dried last March, 1946, Peel ‘and core the apples, and place on waxed paper on trays, or on a board, and put in the sun. Turn the apples at times, or they stick; and do not allow them to overlap, Three days in the sun is about ample, and they should be leathery and golden-brown. Store in jars or in greaseproof bags in a large tin. When required, soak them in water for 2 to 3 hourg and cook gently. They should then be white and fluffy. Do not use soda.
