Mix 2 cups of sifted four; 1 cup of sugar; 1 cup of sultanas or raisins; 1 tablespoon of finely chopped lemon peel; 1 teaspoon of mixed spice; Y2 teaspoon of salt. Put them into a fairly large basin. Then put 2 tablespoons of nice dripping or butter into a large cup of boiling water and let it dissolve. In another cup of cold water dissolve 1 teaspoon of baking soda. Mix these with the dry ingredients, put into a well greased basin, and leave it to stand all night. Steam for 4 or 5 hours-the longer the better. When cooked, it looks like a very rich plum pudding.
