Preserving Butter
Dear Aunt Daisy, I am wondering if you could supply me with a recipe for preserving some butter, which I have managed to save up. It would be very handy to bake with, and I know it would not keep long without some way of preserving it. Hoping you or some kind Link can help me. Sincerely, A Link, Dunedin. Yes, that is quite easy, as lots of country people will know, who make their own butter. Make a brine strong enough to float an e&g or potato. Have the pats of butter already wrapped up tightly in greaseproof paper, and put them in the brine. A weight on top will keep them thoroughly immersed, Keep the brine in a cool place, of course.
