Devilled Steak
A porterhouse steak, about an inch thick, is best for this. Score both sides, squeeze the juice of a lemon well over each side, and place on a dish. Make the following "devil." Two tablespoons of brown sugar, one dessertspoon of any dark jam, one large dessertspoon of Worcester Sauce, 2 tablespoons of tomato sauce, 1 teaSpoon each of pepper and salt, and 2 tablespoons of vinegar. Mix all well together, and pour over the steak on the dish, pressing it well in, with a large spoon, each side of the steak. Soak for 2 hours, then grill, place on a very hot dish and put pieces of butter over it. Heat up any of the "devil" left on the dish, pour over the steak, and serve very hot. This is very popular with men!
