Devilled Steak

A porterhouse steak, about an inch thick, is best for this. Score both sides, squeeze the juice of a lemon well over each side, and place on a dish. Make the following "devil." Two tablespoons of brown sugar, one dessertspoon of any dark jam, one large dessertspoon of Worcester Sauce, 2 tablespoons of tomato sauce, 1 teaSpoon each of pepper and salt, and 2 tablespoons of vinegar. Mix all well together, and pour over the steak on the dish, pressing it well in, with a large spoon, each side of the steak. Soak for 2 hours, then grill, place on a very hot dish and put pieces of butter over it. Heat up any of the "devil" left on the dish, pour over the steak, and serve very hot.
