MONKS’ PIE
This really makes a very tasty meal indeed: ‘ Three cups of mashed potatoes; 3 heaped tablespoons of grated cheese; 1/2 Ib. of tomatoes; 2 pint of white sauce; 2 tablespoons of butter; 1 teaspoon of grated onion; 4 or 5 eggs; and pepper and salt. Scald, peel and slice the tomatoes. Melt the butter in a saucepan. Add the tomatoes, cover ani simmer fill pulpy. Rub through a sieve, and beat in with the potatoes; season, and add onion and half the cheese. Put in a Pyrex dish. Make hollows with a tablespoon to take the 4 or 5 eggs (minus the shell, of course) -just break them into the hollow. Cover with white . sauce, and sprinkle with cheese. Bake till brown in a hot oven.
