TODAY’S RECIPE

COFFEE NUT CAKES 2oz butter. 2oz castor sugar, 1 egg, 2 tablespoons milk, 3oz flour, i teaspoon baking powder. 2 teaspoons coffee essence, loz chopped nuts. The coffee icing is made with the following ingredients; Coz icing sugar, some boiling water, coffee essence. Cream the butter and sugar, beat up the egg in the milk, and add to the butter and sugar, together with some of the flour. Beat well. Add the rest of the flour, previously mixed with the baking powder, then add the coffee essence, chopped nuts and a pinch of salt. Divide the mixture into small greased bun tins or paper cases and bake for fifteen minutes in a moderate oven. When cold, cover with the coffee icing, and place half a walnut on top of each cake. To make the icing, put the sieved icing sugar in a basin, and pour in a little boiling water. Mix smoothly, adding sufficient boiling water until it is of a smooth coating consistency. Add the coffee essence to taste.
