TO-DAY’S RECIPE.

SPECIAL CHOCOLATE OAKE. Take i cup butter, 1% cups sugar, 9 cup milk, 2i cups flour, 2 squares unsweetened chocolate, i teaspoon bicarbonate of soda, 5 teaspoon cream of tartar, 5 egg whites. Cream butter, add gradually half the sugar and the melted chocolate. Beat whites until stifl’ with remaininrr sugar, and set aside. Beat yolks till thick and add to butter and sugar. Mix and sift dry ingredients, and add, alternately with milk, to other mixture. Add vanilla and egg whites, and bake in square tins in a moderate oven. Fill and top with white mountain creamz—Two thirds cup sugar, one-third cup flour, pinch of salt, 1; cups scalded milk, 1 teaspoon vanilla, or a teaspoon lemon essence, 2 eggs or egg yolks. Mix dry ingredients, add scalded milk gradually, and cook for 15 minutes in a double boiler, stirring constantly till mixture thickens. Add eggs, slightly beaten, and cook for two or three minutes longer. Cool and flavour. Just before using add half a cup 01 stiffly whipped cream.
