Chemists and research workers have decided that bacteria is the cause of our quality troubles in butter and cheese and that the only method of attacking the problem is by complete sterilisation of all equipment in the cow shed and after every milking. The grade or every farmer‘s milk and cream depends upon bacteria. If it is made impossible for their development the cause oi’ 90 per cent. of ;iow gradings is removed. This can now be done in such a simple and ‘eflective manner as to make the ‘ Speedway proposition irresistible. The ‘only efleetive method of killing bac‘teria and assuring oneself of superfine grade is to sterilise all pipes and ‘utensils with wet steam after they‘ have been thoroughly cleansed with cold and boiling water. it is import—ant to realise that dry~super~heated steam is not as effective as wet steam and in addition it has the citect of baking the casein solids of the milk residue on to the utensils or the in—sides ot tubes. etc. The wet, steam delivered by the Speedway eliminates the baking of the casein and it will not injure rubberware. i In the national interest and to do his bit to make New Zealand butter and cheese command a. better price :on the world‘s markets every farmer ishould install a Speedway in his shed and as it is being demonstrated at the *Winter Show all farmers should make a point or learning more about this important (lairying unit.
