TO-DAY’S RECIPE.
DATE MOULD. Dates are a valuable winter food, possessing, in common with other dried fruits, a high caloric value, a mould can he made by preparing them in the following way:—Stone and lightly chop a pound of dates, stew them in a little water with the grated rind and juice of a lemon. Put an ounce of powdered gelatine into a stewpan with threequarters of a pint of water, and stir until the gelatine has melted. Add a wineglass of claret and the juice from the stewed dates. Boil and then add the dates, pour into a well-wetted china mould, and when turned out serve with cream.
